Join the holiday spirit at Fuego at Hotel Maya on Christmas Eve, Sunday, December 24, and Christmas Day, Monday, December 25, for a delicious holiday dinner from 5-9 p.m., along with live entertainment on Christmas Eve by Francisco Reyes Latin Jazz Trio from 11:30 a.m.- 3:30 p.m., and Andres Vadin from 5-9 p.m., and on Christmas Day with Daveed Alvarado from 5-9 p.m.

The Latin-infused Fuego restaurant sets the holiday mood with its festively decorated “Winter Wonderland Cabana” for up to 15 guests, which is available by reservation. First course: choice of Kabocha and Persimmon Soup with crispy fennel and chive oil; Ox Tail Tamales with stone ground masa, guajillo sofrito, mushrooms and cashew crema; Crab Cakes with jumbo lump crab meat, fired roasted pepper sauce and fried leeks; or Fuji Apple and Candied Walnut Salad with baby green leaves, dried cherries, roasted honey squash, feta cheese and Zinfandel citrus vinaigrette.

Entrees: Roasted Filet Mignon with truffle Cipollini confit, Valdeon blue cheese, Yukon potato purée and organic sprouting cauliflower; Mary’s Farm Roast Turkey with honey squash stuffing, pan-roasted gravy, potato purée and sweet Vermouth cranberry compote; Chilean Sea Bass with pan-roasted sea bass, sage butter sauce, mushrooms, winter squash and charred broccolini cremolata; or Pot Roast Style Short Rib with prime-cut short ribs, juniper berry port glaze, red kabocha, mushrooms, winter carrots and rapini.

Dessert: Bûche de Noël with chocolate génoise, ganache, vanilla buttercream frosting and dried cranberries.

To help get into the holiday spirit, guests can enjoy a famous Fuego Margarita of Reposado tequila, Cointreau, lime juice, and agave nectar; the Spicy Paloma, a house-infused jalapeño Reposado tequila, grapefruit, and lime juice; red or white sangria that is served by the glass or pitcher; and Rotating IPA drafts on tap, along with domestic, craft and imported bottles. A variety of red and white wines are also available.

Fuego, the modern, Latin infused indoor-outdoor restaurant, and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating on the patio area. Fuego’s stunning open-air views and expansive patio seating include the Pacific Ocean, Long Beach skyline and Queen Mary. Fuego restaurant is open daily from 7 a.m. to 9 p.m.
